Recently, the rare goat with lemon – a famous specialty of Ninh Binh – was listed by the global culinary website Taste Atlas as one of the best goat meat dishes in the world. The dish is described as a “traditional specialty of Ninh Binh”, with a special preparation method: thinly sliced goat meat, lightly cooked with lemon juice, combined with chili, garlic, lemon leaves, pepper and sesame. Rare goat with lemon is often served with figs, green bananas soaked in vinegar and soy sauce.
Established in 2015, Taste Atlas (Croatia) is a prestigious culinary website that introduces and ranks traditional dishes around the world based on the reviews of experts and culinary critics.
Notably, in order to honor and promote the value of local cuisine, Ninh Binh has organized many attractive activities such as culinary competitions, seminars, and the promotion program "Culinary quintessence of the ancient capital". These events attract a large number of chefs, culinary experts, domestic and international tourists, contributing to raising the image of Ninh Binh cuisine on the tourism map of Vietnam and the world.
In the first 3 months of 2025, Ninh Binh tourism recorded positive results with more than 4.4 million visitors, an increase of 13.4% over the same period in 2024, including 535 thousand international visitors, an increase of 40.8% over the same period in 2024; Tourism revenue reached nearly 4.7 trillion VND, up 29.3% over the same period last year. These positive signals show the growing attraction of Ninh Binh tourism, thanks to the harmonious combination of nature, culture and unique cuisine.
